The story

Milind Sovani made his Singapore name as the chef behind The Song of India, Asia's first Michelin-starred Indian restaurant. Masalaa Bar is his solo project — deliberately lighter, more playful, more affordable. The signature pani puri shots and pao bhaji martinis are his way of using a casual-dining format to nudge Singaporeans toward dishes most Indian restaurants here don't bother with.
